A Michelin-starred partnership brings two renowned British pubs together for a special cross-county culinary exchange.

This January, two of the UK’s most distinguished country pubs are joining forces for a rare gastronomic event. The Nut Tree Inn in Oxfordshire, which has retained a Michelin Star since 2008 under the leadership of Michelin-starred chef Mike North and his wife Imogen, will collaborate with the Galvin Green Man in Essex, founded by Michelin-starred chefs Chris and Jeff Galvin and proudly recognised with a Bib Gourmand. Together, the teams will present an exclusive culinary partnership designed to celebrate the strengths of their acclaimed kitchens.

For two evenings only, on 15th January in Chelmsford, Essex, and 29th January in Oxfordshire, guests will have the opportunity to enjoy a special menu exchange devised by the award-winning chefs. Each pub will host a one-night-only four-course dining experience, with chefs from both establishments working side by side in the same kitchen. Diners can expect dishes that reflect the chefs’ creativity, technical skill and mutual appreciation for refined British cuisine.

15th January: The Nut Tree Inn at Galvin Green Man

At Galvin Green Man, guests will be welcomed with a collaborative menu that blends the refined craftsmanship of The Nut Tree Inn with the signature precision of the Galvin kitchen. The evening begins with The Nut Tree Inn’s beautifully balanced Salad of Cornish crab, paired with bright citrus fruits, chilli and coriander to create a fresh and delicate start to the meal. This is followed by a Galvin-crafted middle course of a classic Fillet of sole ‘Veronique‘, served with a luxurious Champagne sauce and complemented by sea vegetables. For the main course, The Nut Tree Inn presents an elevated take on Guinea fowl, featuring roast breast alongside a rich leg tart, finished with morel and Madeira sauce, hazelnut and a velvety truffle cream. To finish, the Galvin team serves up a light and fragrant Yorkshire rhubarb soufflé, complete with crumble and milk ice cream.

When the collaboration moves to Oxfordshire, diners at The Nut Tree Inn will experience a menu shaped by Galvin’s celebrated classics and The Nut Tree Inn’s creative, produce-led approach. The evening opens with Galvin’s indulgent Lasagne of Dorset crab, enriched with beurre Nantaise and finished with fresh pea shoots for a buttery, elegant start. The second course, crafted by The Nut Tree Inn, features Roasted veal sweetbreads served atop a pearl barley and Jerusalem artichoke risotto, brought together with a subtle maple glaze for depth and warmth. For the main, the Galvin team showcases a Roast Cumbrian fillet and slow cooked beef cheek, served alongside truffle mash and a rich Bordelaise sauce. The menu concludes with a Nut Tree Inn favourite, the comforting Sticky toffee pudding with caramel apple and vanilla ice cream, for a nostalgic and indulgent finale.

Both The Nut Tree Inn and Galvin Green Man have earned loyal followings for their refined yet comforting approach to British dining.
