CEO Martin Williams is accelerating the development of the group’s growing portfolio, building on the success of Liverpool Street by bringing the elevated tavern format to London’s financial quarter and New York’s Hudson Yards.

Following the positive reception to the September opening of Liverpool Street Chop House & Tavern, The Evolv Collection has confirmed the next phase of its Tavern rollout with two new venues: Paternoster Tavern in the heart of St Paul’s, and Queens Tavern in New York’s Hudson Yards. Paternoster Tavern is set to open on 18th November, with Queens Tavern scheduled for launch in early 2026.

A considered Brand Evolution

The latest tavern locations represent a planned expansion of The Evolv Collection’s Chop House & Tavern identity, offering relaxed, welcoming spaces for drinking and dining that sit alongside the group’s full-service Chop House restaurants.

These are destinations for gathering, whether for a quick £5-pint, cost price caviar or Welsh Rarebit after work or an evening of celebration with friends.”

Paternoster Tavern: Reviving a Grade II Listed Landmark

Opening on 18th November 2025, Paternoster Tavern will take over a beautifully restored Grade II listed former bank at 47 Ludgate Hill. The interiors pay homage to Sir Terence Conran’s design ethos, drawing inspiration from Liverpool Street Tavern with its rich wood finishes, deep tones of red and blue, and refined brass and gold accents.

The venue will also feature a dedicated lower-ground area for 50–60 guests, designed for private events, club gatherings and intimate dining occasions, bringing a fresh layer of versatility to hospitality options in the Square Mile.

The Tavern Offering

Both Paternoster and Queens Taverns will present the signature bar menu first introduced at Liverpool Street Tavern, curated by Mike Reid. The selection celebrates classic British dishes, including three premium pies — British Beef & Red Wine, Free-Range Chicken & Leek, and a vegetarian Forest Mushroom & Asparagus — alongside traditional sandwiches such as Salt Beef with English mustard and pickles on malted rye, Welsh Rarebit, Ploughman’s, and the Chophouse & Tavern Club.

For guests seeking a more extensive meal, the full Chop House menu will be available next door at Paternoster Chop House.

The drinks selection will mirror the popular Liverpool Street line-up, including Guinness served in traditional tankards. Paternoster Tavern will also offer £5 pints, catering to City professionals and local visitors.

Queens Tavern: Expanding to New York

Queens Tavern will debut in early 2026 at 20 Hudson Yards, becoming The Evolv Collection’s third New York venue and its first Tavern-format site in the United States. Additional details about the New York opening will be shared closer to launch.

A Complementary Brand Family

The Tavern format has been developed as a lively and approachable counterpart to the Chop House restaurants, sharing the same commitment to quality British produce and craftsmanship but delivered in an informal, pub-inspired setting ideal for after-work drinks, casual get-togethers or spontaneous nights out.
