Scottish Bakers is proud to announce the launch of its Future of Bakery reports, a dual insight piece covering both sweet and savoury bakery category trends. These reports are a key part of Scottish Bakers’ strategic commitment to support the sustainable growth and innovation of its members across Scotland’s bakery sector. The insight driven resource has been developed in partnership with global bakery ingredients supplier Dawn Foods.
Available exclusively to Scottish Bakers’ members via its new digital Insights Hub, the report offers a comprehensive analysis of market performance, shopper behaviour, pricing tiers, leading players, and emerging trends across both sweet and savoury bakery categories – providing timely intelligence to support strategic business planning in 2025 and beyond.
The research is based on a combination of consumer panel data from NIQ, representing 30,000 households across the UK, and bespoke research conducted by insight agency TRKR, which surveyed more than 500 bakery shoppers in Scotland.

The report reveals that Scotland’s sweet bakery market is now valued at £261 million, with consumer spend increasing by +4.6% year-on-year, significantly outpacing both total bakery and total grocery spend performance in Scotland, both standing at +2.8%. This positions sweet bakery as a key strategic category for retailers looking to enhance overall store performance.
Meanwhile, spend in the savoury bakery category has risen by +3% year-on-year, closely behind total grocery growth which is up +3.4% in Scotland. This reaffirms the savoury bakery category’s role as a staple in Scottish shopping baskets.
While Bread accounts for 31% of the category’s volume, the strongest growth is being driven by Bread Rolls, Flatbreads, and Sausage Rolls – highlighting areas of opportunity for future product development and merchandising focus.
