This November, Number Eight in Sevenoaks will host an exceptional dining experience — a reunion between renowned chefs Tom Anglesea and Stuart Gillies, cooking side by side for the first time in two decades.
Taking place on Thursday, 6 November, the exclusive evening will feature a four-course menu celebrating Kent’s finest seasonal produce. Guests can expect an inspired collaboration that blends global culinary expertise with the distinctive creativity and technical precision of two chefs whose careers have spanned continents.
Tom’s career began with a formative stage at Gordon Ramsay’s Boxwood Café, where he worked under Stuart Gillies, who later became Managing Director and then CEO of the Ramsay Group. It was Stuart who played a key role in helping Tom take his next leap — from London to New York. What began as an opportunity with Soho House evolved into a position at Thomas Keller’s world-renowned Per Se, where Tom refined his skills in one of the most prestigious kitchens on the planet.
Over the years, Tom has forged a reputation for his modern, globally inspired cuisine. After earning acclaim at The Laughing Heart in Hackney, he took on his current position as Head Chef at Dovetale in London, where his inventive approach continues to impress critics and diners alike.
Stuart Gillies, owner of Number Eight, brings over three decades of experience in some of the world’s most celebrated kitchens. His culinary journey includes time spent in Michelin-starred restaurants across Italy, Sweden, and New York, as well as within London landmarks such as Le Caprice and The Connaught. As Chef Patron of Gordon Ramsay’s Boxwood Café and later CEO of the Gordon Ramsay Group, he led an international portfolio of restaurants while becoming a familiar presence on television, appearing on programmes like Great British Menu and Saturday Kitchen. Today, Stuart focuses his attention on his Kent ventures — Bank House in Chislehurst and Number Eight in Sevenoaks.
